Cajun Shrimp
2-3 pounds of shrimp, unpeeled
1 T old bay seasoning
1 T lemon pepper seasoning
1 T cajon seasoning (I use Tony Chachere)
1½ t cayanne (less for mild)
1½ t paprika
2 heads of garlic, peeled, diced finely
3 limes, juiced
2 cups butter, or margarine
½ T brown sugar
Mix dry ingredients together, set aside
In large pan: med/high heat
Add the butter and garlic, simmer for 5 minutes
Add brown sugar, simmer 1 minute
Add lime juice
Stir in dry ingredients (mixed)
The add shrimp until cooked.
Optional: add ears of corn, sausage and/or cooked potatoes
Serve with white sticky rice or over cooked linguini
