Mushroom Gorgonzola Penne

1 lb. penne
½ C butter, plus 3 T
1 pint heavy cream
4 oz. gorgonzola (or blue cheese)
¼ C parmesan
1 t nutmeg (optional)
1 pkg sliced mushrooms

Melt 3 T butter and saute mushrooms for 8 minutes.
Add remaining butter, stirring constantly and boil 1 minute.
Slowly add cream, boil 2 minutes.
Reduce heat.
Add cheeses and nutmeg.
Meanwhile cook pasta, drain and toss with olive oil.
Pour sauce over pasta.

Add ins: cooked chicken and/or asparagas

Chicken Marsala



2  boneless, skinless chicken breasts
salt and pepper
½ cup flour (corn starch for gluten-free)
3 + 3 T  olive oil (3 T for each side)
8 ounce container of mushrooms, (about 14) sliced and cleaned
2 T butter (or margarine)
½ c sweet Marsala wine
¼ c chicken broth
¼ c sherry or  white wine

Split each chicken breast through the middle to make 2 pieces. 
Place plastic wrap over them and pound each one flat - until they are about a quarter inch thick. 
Season  with salt and pepper on both sides. 
Place some flour on a plate and and dredge each piece of chicken in it.
Heat oil over medium-high heat and saute each piece of chicken for 3-4 minutes on each side until they are golden brown.
Remove chicken and place on serving platter covering them with foil.
Reduce heat to medium - add butter and mushrooms. 
Saute mushrooms for 4-5 minutes and season with salt and pepper. 
Add marsala wine, white wine (or sherry) and chicken broth allowing the liquid to reduce slightly – about 3 minutes. 
Pour mushrooms and sauce over chicken and serve.

Tip:
Pour chicken and sauce on top of mashed potatoes.

Roast Beef with Potatoes and Carrots


1- 7 bone roast or other inexpensive beef roast
3  unpeeled potatoes of your choice
3  peeled and chopped carrots
1  large cut up onion
1  can whole kernel corn
1/2 t each - salt, pepper, garlic powder
1  bay leaf


Place all in crock pot
Cover with water
Low 7 - 8 hours
30 minutes before you're ready to eat;
mix 3 1/2 T of flour with a 1/2 C milk, pour into crock pot and stir.

Quick n Cheap Burritos

1 pound hamburger, browned
1 can (24 oz) Pinto Beans (I prefer Sun Vista)
3 cans (4 oz) diced green chilis

Place all in pan and heat over med/low heat at least 1 hour.

You can also put all in the crock pot on low for about 4 hours.

White Chili Beans


White Chili Recipe

1-2 chicken breast, diced 


3 cans Great Northern Beans (or any white beans)


2 small cans diced green chilies

2 C chicken broth


1 small chopped onion


1 clove diced garlic


1 t cumon (or taco seasoning)


1 t oregano

Put all in crock pot on high for 4 hours


or on stove top on low for 2½ hours
.
Garnish with jack/cheddar cheese and crumbled tortilla chips

Green Chili Chicken Rolls

4 chicken breasts (flattened)
1 small can diced green chilis
1 bag of shredded jack cheese
Seasoning Salt (Tony Chachere's is my fav) 


Preheat oven to 350° F
Place chicken on a baking sheet.
Top with a 1 tsp of green chilis 
Then sprinkle with cheese
Roll chicken and secure with a toothpick.
Sprinkle Chacheres on top.
Bake for 40 minutes


Serve with your favorite rice. (Check my posts for recipes)
