Leftover *beef, cut into bite sized pieces
Noodles (pad thai, spaghetti, fettuccine, vermicelli)cooked
½ head cabbage, shredded
½ c carrots, shredded
1 garlic clove, minced
1 C broccoli, steamed
Toss all together in a pan over medium heat.
Sprinkle with soy sauce to taste
add some black pepper and chili pepper
*or chicken or pork, cut up

Simple Granola
2 C rolled oats
½ C nuts (pistachio, walnuts, almonds - mix or match)
¼ C seeds (sunflower, raw pumpkin, chia - mix or match)
½ t vanilla
3 T real maple syrup (or honey, or agave)
2 T soft coconut oil (or olive oil)
¼ C dried fruit (optional)
pinch of sea salt
Preheat oven to 325°
Line a cookie/baking sheet with parchment paper
Stir all ingredients together and spread across paper.
Bake for 10 minutes, stir, bake for an additional 5 minutes.
Remove from oven and let dry for 30 minutes.
Store in an air tight container for about 2 weeks in the refrigerator.

Green Chili Pork Roast
2-5 lbs. lean pork roast
1 - (24 oz) can green enchilada sauce
1 small onion - diced
Put all in a crock pot for 6 hours on high.
Shred and make into tacos or burritos or serve over rice or mashed potatoes.
