Ham and Cheese Crescents
1 package crescent rolls, unroll as one large rectangle and pinch dotted lines together.
3 slices of Ham lunch meat (rectangles)
4 oz. cream cheese
2 green onions, diced
Spread cream cheese onto crescent, lay 3 pcs of ham across the top.
Sprinkle green onions over all.
Roll jelly roll style starting on one of the short ends.
Slice into 8 pieces, lay face up on baking sheet.
Bake at 350° for 10 minutes or until browned.

Chicken and Egg Salad
1 cooked, shredded chicken breast*
2 hard boiled eggs, chopped
2 ribs celery, diced
3 T mayonnaise
Salt and pepper to taste
Stir all together.
Serve with crackers or...
Serve on toasted english muffin or bread of your choice
*I boiled one boneless breast for about 15 minutes
you can also use left over roasted chicken.

Shrimp Stuffed Mushrooms
1 package of button mushrooms (about 14)
4 T melted butter (or margarine)
¼ C bread crumbs
10 medium cooked shrimp, diced
Twist and pull stems from mushrooms and discard.
Grease bottom of casserole dish and place mushrooms, open side up.
In a bowl stir together, shrimp, crumbs and butter.
Over stuff each mushroom.
Bake at 350° for about 40 minutes or until golden brown.

Egg Rolls and Egg Flower Soup
Boil 3 chicken breasts (covered with water)
Add
4 ribs celery
1 bunch green onions, chopped
1 carrot, chopped (or 6 baby carrots)
5 bouillon cubes
Boil 40 minutes
Remove all from broth.
Keep broth boiling.
Scramble 2 eggs and pour from up high while stirring broth.
Shred chicken, mix with veggies and make eggrolls.
Egg rolls.
Wrappers available in deli section.
Place spoonful of mix in center of wrapper, roll up like a burrito, wet the edge to seal and fry until crispy.
Hint: I usually double the veggies and also make "Chinese Fried Rice"
Spinach Dip
2 boxes of frozen spinach, drained and chopped
1 bunch of parsley, chopped
1 bunches green onions, diced
10 oz. mayonnaise
16 oz. sour cream
2 envelopes dry Leek soup
Mix all.
Serve in a bowl made of bread.
Serve with croutons and/or crackers

Chili con Queso Dip
2 T butter (or margarine)
2 T finely chopped onion
1 clove garlic, minced
2 tomatoes, peeled and diced
1 (4oz) can diced green chilies
2 ½ c shredded cheese (jack or cheddar)
Saute onions and garlic in butter, add tomatoes and cheese.
Heat until melted.
Serve with fried tortilla chips, french fries, potatoes, broccoli or cauliflower.
