Ranch Pork Chops (slow cooker)

Dump into freezer bag* or slow cooker 
4-6 pork chops
1 can cream of chicken (or celery or mushroom)
¼ tsp garlic powder
¼ tsp onion powder
pinch each of salt and pepper
*2 cups of water
1-2 chicken bouillon cube
2 Tbs ranch dressing (dry)
4-6 potatoes, diced
4 carrots, diced
Low 8 hours or high 6 hours



*do not add to freezer bag wait until adding to slow cooker

Jalepeno Carrots

 3-5 carrots, cut into circles (¼")
1 small onion, sliced into bite size pieces
1 large jalepeno, seeded, sliced into bite size pieces
¼ teaspoon cumin (or taco seasoning if you don't have cumin)
1 bay leaf
½ teaspoon oregano 
½ teaspoon coriander seed (opt)
¼ teaspoon kosher or sea salt
1 cup of white vinegar
½ cup of water
Saute carrots, onion and jalapeno  in skillet for a few minutes.
Add seasonings, water and vinegar.
Simmer until the jalapenos change color, (just a few minutes.)
Pour all into storage jar or bowl (glass is best) and refrigerate 8 hours.

Asian Beef Noodle

Leftover *beef, cut into bite sized pieces
Noodles (pad thai, spaghetti, fettuccine, vermicelli)cooked
½ head cabbage, shredded
½ c carrots, shredded
1 garlic clove, minced
1 C broccoli, steamed

Toss all together in a pan over medium heat.
Sprinkle with soy sauce to taste
add some black pepper and chili pepper
*or chicken or pork, cut up

Egg Rolls and Egg Flower Soup


Boil 3 chicken breasts (covered with water)
Add
4 ribs celery
1 bunch green onions, chopped
1 carrot, chopped (or 6 baby carrots)
5 bouillon cubes
Boil 40 minutes


Remove all from broth.
Keep broth boiling.
Scramble 2 eggs and pour from up high while stirring broth.


Shred chicken, mix with veggies and make eggrolls.


Egg rolls.
Wrappers available in deli section.
Place spoonful of mix in center of wrapper, roll up like a burrito, wet the edge to seal and fry until crispy.


Hint: I usually double the veggies and also make "Chinese Fried Rice"

Roast Beef with Potatoes and Carrots


1- 7 bone roast or other inexpensive beef roast
3  unpeeled potatoes of your choice
3  peeled and chopped carrots
1  large cut up onion
1  can whole kernel corn
1/2 t each - salt, pepper, garlic powder
1  bay leaf


Place all in crock pot
Cover with water
Low 7 - 8 hours
30 minutes before you're ready to eat;
mix 3 1/2 T of flour with a 1/2 C milk, pour into crock pot and stir.
