Blueberry Cream Cheese Bread

Heat oven to 350° 
3 bowls
Mix
2 C flour
1 tsp Baking Powder
½ tsp Baking Soda
pinch of salt

Separate Bowl Mix
½ c sugar
½ c brown sugar
1.3 c vegetable oil
2 eggs
1 t vanilla
¾ c buttermilk (or milk+½ T lemon juice)
Combine with wet ingredients
add:
1 c of fresh or frozen blueberries, fold in
Pour half into loaf pan

Last bowl Mix 
1 block of softened cream cheese
¼ c sugar
1 egg
splash of vanilla
optional zest of lemon
Pour over loaf pan
Top with remaining mix

Bake 45-60 minutes

Chicken Cordon Bleu Casserole


8oz softened cream cheese
2 cups shredded swiss cheese (divided)
1 packet of green onion dip (dry)
mix above together, using 1 cup of swiss cheese, microwave for 30-45 seconds to stir them easier
add in
¾ cup milk
stir, then add:
1 (16oz)can biscuits, cut into 6 pcs each
1 cup diced cooked ham
2 cups cooked, shredded chicken
Stir together and place in a 9 by 13" greases baking dish
Spread across evenly, top with remaining 1 cup of swiss cheese
Bake at 350° for 35 - 40 minutes.

Creamy Italian Chicken (slow cooker)

2-4 boneless chicken breasts
1 pkg Italian dressing (dry)*
1 can cream of chicken soup
4 oz (half block) cream cheese

Set up in a freezer bag (or start fresh)
Put all ingredients in a slow cooker.
Cook on high for 4 hours or low for 6 hours.

Serve over pasta
I used rigatoni and it was great!

*If you make a double batch, only use 50% more of the Italian dressing.

Turkey Chili Soup (slow cooker)

 1 pound ground turkey
1 can white beans (any is fine)
1 can chicken broth (or 1tsp bouillon w/1c water)
1/2 block cream cheese (4oz)
1 Tbsp minced garlic
1/2 large onion, diced
1 can corn
1 can diced tomatoes
Brown turkey with onions and add all to slow cooker.
Cook on high for 4 hours.

Jalapeño Popper Chicken

4 jalapeños, deseeded
4 thinly sliced chicken breast, pounded
4 slices of bacon
4 oz cream cheese
Salt and pepper

Preheat oven to 375°

Slice jalapeños in half and de-seed. 
Fill jalapeños with cream cheese. 
And put two sides together, making one whole jalapeño
Wrap chicken around the jalapeños
Wrap bacon around the chicken. 
Seal with a toothpick. 
Place on a lined and greased baking dish. 
Bake for 40 minutes or until bacon is crispy and chicken is thoroughly cooked.

Crab Artichoke Dip

1 C canned artichokes (diced)
1 C imitation crab (diced)
1 C mayonaise
8 oz. cream cheese (cut up)

Place all in a casserole dish and bake for 30 minutes at 350°

Earthquake Cake


1 box german chocolate cake mix (plus ingredients*)
¼ C shredded coconut
1  C chopped walnuts (4 oz)
¼ C margarine
8 oz. cream cheese
1 16 oz box powdered sugar (confectioners) (= 2 C)


Preheat 350°
9 x 13 dish, greased
Cover bottom of pan with nuts and coconut
Prepare cake mix according to package directions*
Pour cake batter over nuts and coconut.
Melt margarine in a medium bowl, add cream cheese and powdered sugar, stir to blend.
Spoon over batter, spread and swirl across (use end of wooden spoon) don't touch bottom of pan
Bake 40-42 minutes.

*3 eggs, ½ C veg. oil, 1¼ C water
