Swedish Meatballs 2 ways (slow cooker)

3 T butter, melt in pan, then add
1/3 cup flour - make a rioux
Stir until well combined, lumpy
2 cups, beef stock/broth
Whisk in slowly
1 cup  heavy cream
1 tsp dijon mustard
2 tsp soy sauce
let simmer, stir 
once it's thickened,
Pour over premade meatballs of your choice.
I used frozen about 40 meatballs


Serve over linguini or rice

Slow cooker
Into slow cooker add:
1 pkg dry onion soup mix (3 Tb)
1 15oz can beef broth
1 cream of chicken soup
2 Tbsp A1 steak sauce (any brand) or add 1 Tbsp steak seasoning
Stir
Add one bag of frozen meatballs
High 4-5 hours
cook pasta, egg noodles work well
Add to slow cooker
8 oz sour cream
cooked noodles, a little at a time, stir
cover and let marinade for 15 minutes.

Vegetable Soup or Cocido


2 cans of tomatoes (stewed, diced - any kind works)
4 celery ribs, chopped
1 (or 8 baby) carrot, peeled and chopped
1 small onion, chopped
4 potatoes, peeled and diced
6 C beef broth (or 6 cups water and 2 t beef bouillon)
Then choose your favorite veggies
This time I chose, squash and asparagus 

Dump all into a large stock pot on medium/low heat for minimum 2½ hours.

Cocido - heat it up by adding 1 jalapeño OR 2 serrano chilis seeded and chopped.

Tips: You can use corn, green beans, bell pepper, hominy, and/or zucchini.
