Crab Corn Chowder

2 T butter
2 slices bacon, chopped
1 medium onion, chopped
½ red bell pepper, chopped (opt)
2 ribs celery, chopped
2 T flour
2 t Old Bay
1 t thyme
Salt and Pepper
2 C chicken broth
2 C half n half
1 medium potato (microwave, peel, chop)or 1 C hash browns
1 C corn (or a can)
6 oz crab meat, chopped

Place into large pan:
butter, bacon, bell pepper, celery, and onion, cook about 5 minutes.
Add thyme, a pinch of salt and pepper, stir.
Add potato, flour, and Old bay, stir for 3 minutes.
Whisk in half n half and chicken broth until thickened, about 15 minutes.
Stir in crab and corn.
Hear through.

Wild Mushroom and Onion Soup

 INGREDIENTS

  • 2 Tbsp extra virgin olive oil
  • 1 sweet organic onion, sliced to about ½” thickness
  • 4 cloves garlic, minced
  • 1 tsp pink or sea salt
  • ½ tsp cracked pepper
  • 2 cups shitake mushrooms, whole
  • 2 cups sliced baby bella or cremini mushrooms
  • 4 cups chicken or vegetable broth (organic and gluten-free)
  • 2 cups organic kale, roughly chopped into bite sized pieces
  • ½ cup coconut milk or coconut cream

 

INSTRUCTIONS

In a large pot, heat oil then add onions. Continue to sauté until onions are golden brown, about 10-15 minutes. Add garlic, salt and pepper and mushrooms. Continue to cook until mushrooms are softened and golden. Pour in broth and bring to a boil. Add kale. Reduce heat to low then simmer, covered for 20 minutes. Stir in coconut milk. Season with additional salt and pepper.

Soup Vegetable Barley and Squash Lentil

Vegetable Barley
2 chopped carrots
1 stalk of celery, chopped
1 zucchini squash, diced
½ c barley
4 c broth, any
1 can diced tomatoes
1 tsp thyme

Simmer 30 minutes
Add salt and pepper

Butternut Squash & Lentil
2 minced garlic
1 chopped carrot
1 Tbs olive oil
1 tsp curry powder
1 c red lentils
4 c broth, any
2 c butternut squash, frozen is fine
Simmer 30 minutes
remove half and blend to thicken
Add salt and pepper

Tortellini Soup Slow Cooker

 Dump all except tortellini into slow cooker.
2 chicken breasts (1 pound)
4 c chicken broth (1 box)
2 cans (15pz) diced tomatoes
1 small onion, diced
1 T minced garlic
1 c heavy cream
1 T Italian Seasoning
½ c parmesan, grated
1 t salt
1 t pepper
Cook on high 5-6 hours
shred chicken
Add in
fresh (not frozen) tortellini (18oz)
2 c spinach leaves
cook another hour

Turkey Chili Soup (slow cooker)

 1 pound ground turkey
1 can white beans (any is fine)
1 can chicken broth (or 1tsp bouillon w/1c water)
1/2 block cream cheese (4oz)
1 Tbsp minced garlic
1/2 large onion, diced
1 can corn
1 can diced tomatoes
Brown turkey with onions and add all to slow cooker.
Cook on high for 4 hours.

Arborio Rice and White Bean Soup

    1 Tablespoon Olive oil
    3 garlic cloves, minced
    ¾ Cup arborio rice, raw
    32 oz broth, vegetable or chicken
    ¾ teaspoon basil
    ½ tsp thyme
    ¼ tsp oregano
    16 oz frozen broccoli or broccoli-cauliflower
    1 can (15oz) cannellini beans, rinsed, drained
    2 Cup fresh spinach

    In a large saucepan, heat oil over medium heat; saute garlic 1 minute. Add rice; cook and stir 2 minutes. Stir in broth and herbs; bring to a boil. Reduce heat; simmer, covered, until rice is al dente, about 10 minutes.
    Stir in frozen vegetables and beans; cook, covered, over medium heat until heated through and rice is tender, 8-10 minutes, stirring occasionally. Stir in spinach until wilted. If desired, serve with lemon wedges.

    cover with hot water

    Split Pea Soup (slow cooker)

    ¼ pound bacon, chopped
    1 pound split peas, rinsed
    2 C frozen hash browns 
    1 onion, chopped
    3 carrots, peeled and diced
    3 ribs celery, diced
    2 cloves garlic, minced
    1/8 tsp pepper
    1 pinch red pepper flakes
    8 C chicken broth

    Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until lightly browned, about 5 minutes. Drain on paper towels.
    Place bacon and remaining ingredients in slow cooker.
    Low for 8 hours.

    Creamy Chicken Soup Cheat

    2 cans cream of chicken soup
    1 can water
    1 can milk
    1 C cooked chicken, cut up
    ½ C frozen peas
    Biscuits

    Pour 2 cans of soup, add water and milk.
    Add chicken and peas.

    Make biscuits (canned or bisquick)

    Place biscuits in bottom of bowl and serve soup over them.

    Beef Stew


    1 T olive oil
    4 slices bacon
    ½ lb beef stew meat, cut into 1" cubes
    1 carrot, chopped
    1 small onion, chopped
    1 pkg mushrooms
    2 garlic cloves, minced
    2 T flour
    ½ t thyme
    1 bay leaf
    ¼ C sherry or marsala wine
    4 C beef broth
    ½ C frozen peas
    ½ C heavy cream (or half n half)

    In a dutch oven (or large deep, heavy pan) add olive oil and bacon, cook until crisp, remove and drain on paper towel and chop.
    Add stew meat and brown on all sides, about 3 minutes, remove.
    Add carrot, onion, mushrooms and garlic and stir about 5 minutes.
    Add bacon and meat into pan.
    Add flour and stir.
    Add thyme, bay leaf, wine and broth.
    Bring pot to boiling, set lid on leaving a gap open and reduce heat to simmer for 2 hours.
    Add peas and cream and cook about 10 minutes. 
    Serves 4

    Note: serve in sour dough bread bowls or over cooked egg noodles.

    A Different Chicken Noodle Soup

    Bake 2 boneless chicken breast with seasoning salt (Tony Chacheres). (40 min. @350).
    Put 2T oil in stock pot
    Saute ½ c each of chopped onion and celery
    Dice cooked chicken and add to pot.
    Add one can Northern White Beans
    Cover with 4 C Chicken broth
    Cook on medium heat for about 20 minutes.
    Add ¼ c of dry macaroni noodles. Cook until tender (about 7 minutes).
    Serve with crunchy bread.

    Vegetable Soup or Cocido


    2 cans of tomatoes (stewed, diced - any kind works)
    4 celery ribs, chopped
    1 (or 8 baby) carrot, peeled and chopped
    1 small onion, chopped
    4 potatoes, peeled and diced
    6 C beef broth (or 6 cups water and 2 t beef bouillon)
    Then choose your favorite veggies
    This time I chose, squash and asparagus 

    Dump all into a large stock pot on medium/low heat for minimum 2½ hours.

    Cocido - heat it up by adding 1 jalapeño OR 2 serrano chilis seeded and chopped.

    Tips: You can use corn, green beans, bell pepper, hominy, and/or zucchini.

    Egg Rolls and Egg Flower Soup


    Boil 3 chicken breasts (covered with water)
    Add
    4 ribs celery
    1 bunch green onions, chopped
    1 carrot, chopped (or 6 baby carrots)
    5 bouillon cubes
    Boil 40 minutes


    Remove all from broth.
    Keep broth boiling.
    Scramble 2 eggs and pour from up high while stirring broth.


    Shred chicken, mix with veggies and make eggrolls.


    Egg rolls.
    Wrappers available in deli section.
    Place spoonful of mix in center of wrapper, roll up like a burrito, wet the edge to seal and fry until crispy.


    Hint: I usually double the veggies and also make "Chinese Fried Rice"
