2-4 chicken breast
1 bell pepper, chopped
1 medium onion, diced
¼ c coconut milk
2 Tbsp soy sauce
2½ tsp yellow curry powder
1 Tbsp fish sauce
1½ tsp turmeric
3 garlic cloves, minced
1 Tbsp fresh ginger or ¼ tsp ground ginger
1 Tbsp brown sugar
Bake in small casserole dish 425° for 20-25 minutes
